Tilapia Adobo with Mango Salsa

Mango salsa makes a great topping for fried, grilled or baked fish.  In this recipe Tilapia fillets are marinated in the Filipino adobo sauce (soy sauce, vinegar, and garlic) and baked in the oven.  The dish is then topped with a quick and easy mango salsa made with tomatoes, onions, cilantro, lime juice and of course mangoes.

Servings: 2-3
Prep Time: 40 minutes with marination
Cooking Time: 20 minutes


1 lb tilapia fillets
freshly ground pepper
2 garlic cloves minced
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup white vinegar
2 Garlic Clove Minced
1 large ripe mango
2 medium tomatoes diced
1/2 red onion diced
1 jalapeño minced (optional)
1/4 bunch cilantro chopped
1 Tbsp lime juice
