Cranberry Rice Pilaf

Cranberry rice pilaf is a popular holiday dish commonly served on Thanksgiving or Christmas dinner in the U.S. It makes for a good side dish to the traditional roast turkey or baked ham.  This version of the dish uses sweetened dried cranberries cooked with both orzo and long grain rice seasoned with mild turmeric to give its golden color.   Toasted pine nuts and julienned scallions are added to finish off the dish.  Enjoy.

1 tablespoon butter
1/2 cup orzo
1.5 cups long grain rice
3 pinches of turmeric powder
2.5 cups chicken or vegetable broth
1/2 cup sweetened dried cranberries
1/4 cup pine nuts
3 scallions julienned
