Poached Chicken with Ginger and Scallions

This simple yet flavorful poached chicken recipe is a variation on the popular Chinese dish Steamed Chicken with Ginger and Scallions.  In this version the ginger scallion sauce made with garlic, cilantro, ginger and scallions are rolled in the center of boneless skinless chicken breasts to infuse the meat with its flavors while poaching.   Don't be fooled. Although the dish appears bland, it packs a lot of flavor.  Quick and easy it is among my favorite go to dishes for a quick weeknight dinner.  Serve it on a bed of steamed Jasmine rice and enjoy.

2 garlic cloves
1 inch ginger sliced
6 scallions roughly chopped
1/2 cup cilantro roughly cut
1/4 cup olive oil + an additional 2 tablespoons
1 chicken bouillon
2 large boneless skinless Chicken Breasts (skin is optional)
