Watermelon Gazpacho has become a popular cold soup choice to cool off the summer heat. This recipe sticks to the traditional gazpacho ingredients of tomatoes, cucumbers, garlic and basil. In addition to the watermelon - fresh mint, onions, lime juice and Serrano pepper were included to round out the flavors in this delicious soup.
Prep Time: 2 hours 15 minutes (includes time for chilling)
Special Tools: Blender or Food Processor
6 Cups Watermelon diced (divided)
1 Serrano Pepper
1 Garlic Clove minced
3 Hot House Tomatoes diced (divided)
1 Cucumber peeled, seeded and diced (divided)
1/2 Cup Red Onion diced (divided)
1/4 Cup Fresh Mint chopped
1/4 Cup Fresh Basil chopped
Zest from 1 Lime
Juice from 1 Lime
1 Teaspoon Sherry Vinegar
Salt and Freshly Ground Pepper to taste
Combine 4 cups watermelon, the Serrano Pepper, garlic, half the tomatoes, half the cucumber, and half the red onions in a large blender or food processor. Blend the ingredients until liquified and transfer into a large bowl.
Add the remaining watermelon, tomatoes, cucumber, garlic and red onions to the bowl along with the mint, basil, lime juice, lime zest and sherry vinegar. Stir the ingredients to combine. Season with salt and freshly ground pepper to taste. Cover and place in the refrigerator to chill for 2 hours or more before serving.
Serve this soup cold and enjoy.
