Watermelon Salad




A perfect delicious dish to cool off on a hot summer day.  This watermelon salad is simply dressed with an olive oil-lemon vinaigrette and served with olives, feta cheese, thyme and toasted sesame seeds. A frequent treat in our household during watermelon season.  Enjoy.

Servings: 2
Prep Time: 12 minutes

Ingredients:

3 Tablespoons Olive Oil
3 Tablespoons Lemon Juice
1 Tablespoon Red Wine Vinegar
1 Teaspoon Fresh Thyme
1/4 Teaspoon Cumin
Quarter of a Large Seedless Watermelon
1/4 Cup Black Olives pitted sliced in half
1/4 Cup Feta Cheese crumbled
1/8 Cup Sesame Seeds toasted
Extra Fresh Thyme to garnish

In a small bowl whisk together the olive oil, lemon juice, vinegar, thyme and cumin to create the dressing.  Set aside.

Cut the watermelon into thin narrow triangular slices.  Remove and discard the rind.  Place the watermelon onto serving plates.  Sprinkle olives, feta cheese and toasted sesame seeds over watermelon slices.  Drizzle the dressing over the watermelons and garnish it with some fresh thyme.   Serve and enjoy.
