Fennel & Pear Soup

Fennel Bulb and Pears make a nice flavorful pair in this easy soup.  Chopped onions, garlic and cumin are first sautéed in olive oil.  The fennel and pears are then added and simmered in chicken broth or vegetable broth until soft.  The entire pot is then transferred to a food processor to blend until smooth, reheated and served.

Prep Time: 5 minutes
Cooking Time: 45 minutes
Special Tools: Food Processor or Blender

1 Tablespoon Olive Oil
1 Small Onion chopped
2 Garlic cloves chopped
1 Teaspoon Cumin
4 Cups Vegetable Broth or Chicken Broth
1 Fennel Bulb chopped
2 Pears cut into small cubes

Place a 3 quart pot over medium high heat and add the olive oil.  When hot add the onions and sauté until soft (about 4 minutes).  Add the garlic and cumin to the onions and sauté for another 2 minutes.

Pour the broth into the pot along with the chopped fennel bulbs and cubed pears.  Stir the ingredients to combine.  Bring the pot to a boil, then reduce the heat to a slow simmer and let cook uncovered for 35 minutes.  Remove from heat and set aside to cool for 5 minutes.

Transfer the soup to a large food processor or blender.  Blend the ingredients together until smooth (about 2 minutes).  Return the blended soup to the pot to heat the soup on the stove.  Season with salt and pepper.

Ladle the soup into bowls to serve and enjoy.
