Moroccan Style Steamed Spinach




Steamed spinach makes for a great side dish to almost any meal.  In this Moroccan influenced recipe, spinach is combined with red onions, garlic, almonds, raisins and red pepper flakes.  Add a squirt of lemon to serve.

A quick and simple dish to prepare for almost any occasion.

Servings: 2
Prep Time: 5 minutes
Cooking Time: 15 minutes

Ingredients: 

10 oz Baby Spinach
1 Tablespoon Olive Oil
1 Small Red Onion chopped
2 Garlic Cloves minced
6 oz Sliced Almonds
1 Teaspoon Red Pepper Flakes
1/2 Cup Raisins
Salt and Pepper
Lemon wedges to serve

Wash and drain the spinach.  Bring a cup of salted water to a boil in a steaming pot.  Place the spinach on the steaming pan, cover the pot and let cook for about 2 minutes or until the spinach leaves are wilted.  Cook the spinach in batches if necessary.  Transfer the wilted spinach to a chopping board and coarsely chop the leaves.  Set aside.

On a large skillet place the olive oil over medium high heat.  Add the onions to the pan and sauté until soft (about 3 minutes).  Add the garlic to the onions and sauté for another minute.   Toss in the almonds, pepper flakes and raisins into the skillet and sauté the ingredients together for another 2 minutes.  Remove the skillet from the heat.  Add the steamed spinach to the skillet and toss the ingredients to combine.  Season with salt and pepper and serve lemon wedges on the side.  Enjoy.
