Linguine with Lobster

Linguine with Lobster can make a great romantic dish for a special occasion.  A single large cooked lobster is perfect for two in a creamy white wine sauce simply spiced with thyme, butter and lemon and served with fresh linguine. A rich delectable pasta plate for any seafood lover.

Cooking Time: 20 minutes


1 Large Cooked Lobster (Meat from the Tail and Claws)
Juice from 1 Lemon
3 Tablespoons Butter
2 Teaspoons Fresh Thyme leaves
4 Tablespoons Heavy Cream
4 Tablespoons Dry White Wine
4 Tablespoons Clam Juice
12 oz. Fresh Linguine
Salt and Freshly Ground Pepper

Cut the lobster meat into small pieces and place meat in a small bowl with the lemon juice.

Melt the butter in a large deep skillet over medium heat.  Add the lobster meat and thyme to the pan and stir-fry for a few seconds. Pour in the heavy cream and stir the ingredients for a few more seconds. Then add the white wine and clam juice and let simmer for 2 minutes.  Remove from heat, cover and set aside.

Bring 4 cups salted water to a boil.  Add the fresh linguine and let cook until al dente (about 4 minutes). Reserve 2 tablespoons of the pasta water and drain the linguine well.

Return the lobster sauce over high heat. Add the linguine to the sauce and toss the ingredients together until well combined.  Use some of the reserved pasta water to moisten the noodles. Season with salt and freshly ground pepper. Serve immediately while hot with lemon wedges on the side.  Enjoy.
