Indian Spiced Peas (Gajar Matar)





Peas and carrots are common a common dish in everyday American home cooking. In this variation peas and carrots are treated to Indian style spices with cumin, turmeric, coriander and chili powder blended with onions, garlic and ginger to give these peas and carrots a new flavor and kick.

Servings: 2
Prep Time: 5 minutes
Cooking Time: 15 minutes

Ingredients:

1 Yellow Onion chopped
1 Garlic Clove chopped
1 Inch Ginger chopped
1/4 Cup Vegetable Oil
1 Teaspoon Cumin
1 Teaspoon Turmeric
1 Teaspoon Ground Coriander
16 oz. Frozen Peas and Carrots defrosted
1/4 Teaspoon Sugar
1/4 Teaspoon Chili Powder
1/2 Teaspoon Garam Masala

Place the onion, garlic and ginger in a food processor and blend until finely chopped.

Heat the oil in a large skillet. Add the onion-garlic-ginger mixture to the pan and stir-fry over high heat for 2 minutes.  Reduce the heat to medium and stir in the cumin, turmeric and coriander until fragrant (about 1 minute).  Add the peas and carrots to the skillet and stir in the sugar and chili powder. Add 1/4 cup water to the skille, reduce the heat to a simmer and partially cover the pan to let simmer for 10 minutes.   When done, stir in the garam masala to serve.  Enjoy.
