Spicy Orange Roasted Chicken Wings
Chicken wings are a great choice for appetizers or a side dish. This recipe marinates chicken wings in a sweet and spicy sugary soy sauce and rice vinegar marinade infused with the flavors orange juice, sherry wine, Star Anise, ginger and chili-garlic sauce. The wings are then baked in the oven and finished off with a quick broil to crisp the skin. The result is a delicious finger food dish.
Prep Time: 70 minutes (includes 1 hour marination time)
Cooking Time: 30 minutes
Special Ingredients: Oriental Chili-Garlic Sauce - can sometimes be found in the Asian or Ethnic aisle of most grocery chain stores. It is also available at most Asian Food Markets.
1/3 Cup Soy Sauce
1 Tablespoon Light Brown Sugar
1 Tablespoon Rice Vinegar
2 Tablespoons Sherry wine
Juice from 1 Orange
Zest from half an Orange
1 Star Anise
1 Inch Ginger chopped
1-2 Teaspoons Oriental Chili-Garlic Sauce (more or less according to your preference).
2 -2.5 lb. Chicken Wings - cut into three pieces and wing tips discarded.
In a medium sauce pan combine the soy sauce, brown sugar, rice vinegar, sherry, orange juice, orange zest and star anise. Stirring occasionally, bring the ingredients to a boil, then reduce the heat to a low simmer. In a small bowl stir the cornstarch with a 1/4 cup cold water. Pour the cornstarch roux into the sauce pan and bring the ingredients to a boil to thicken into a syrupy texture (about 2 minutes). Stir-in the ginger and the chili-garlic sauce. Remove from heat and let cool.
Place the chicken wings into a deep baking pan or oven safe dish. The wings should be well separated and not stacked. Pour the marinade mixture over the chicken. Turn the chicken over to coat with the sauce. Refrigerate and let marinate for 1 hour to 8 hours.
Preheat the oven to 400 degrees Fahrenheit. Place the chicken into the oven to bake for 25 minutes. In the last 5 minutes switch the oven from bake to broil to give the chicken wings some crisp. Remove from oven. Let cool for 5-10 minutes. Serve and Enjoy.
