Kale in Soy Miso Lemon Dressing




Kale makes for a quick and easy vegetarian meal or satisfying side dish.  In this recipe, the kale can be served either raw or given a quick blanch in boiling water to cook. A simple dressing made from soy sauce, lemon juice, miso and a small amount of sugar accompanies the greens. The dressing gives a nice citrus punch to the earthy flavor of kale.

Cooking Time: 10 minutes

Ingredients:

2 Bunches Kale (stems removed and leaves torn
1/4 Cup Low Sodium Soy Sauce
2 Tablespoons Miso
2 Tablespoons Lemon Juice
1/2 Teaspoon Sugar

For the dressing, combine the soy sauce, lemon juice, miso and sugar in a small bowl.  Add 2 Tablespoons water to the bowl and stir to combine the ingredients well.  Set aside.
If you prefer your kale raw, you can simply add the dressing in amounts of your preference to the kale. Toss to coat the kale and serve.
If you prefer your kale cooked, bring a saucepan of water to a boil.  In small batches add the torn kale into the boiling water to quickly blanch (about 30 seconds).  Using a slotted spoon transfer the blanched leaves to a large plate or bowl. Once all the kale has been blanched add the dressing in amounts of your preference to the kale.  Toss to coat the kale and serve.
