Asparagus Beef Stir Fry




Stir Fry is a great option for a quick weeknight meal.  In this Chinese inspired wok stir fried dish, I combined New York Strip Steak cut into beef strips with asparagus, carrots, ginger and garlic in a salty sweet broth sauce.  It is simple, quick and delicious.

Serve it with a side of steamed jasmine rice or noodles and enjoy.

Prep Time: 10 minutes
Cooking Time: 15 minutes
Special Tools: Wok or Large Deep Skillet

Ingredients:

3 Garlic Cloves minced
1 lb. New York Strip Beef Steak cut into 1/4 inch thick strips
Salt and Freshly Ground Pepper
2 Tablespoons Sesame Oil
1 Carrot sliced
1/2 Ginger Root sliced
1 Bunch Asparagus cut into 2 inch stems (discard hard bottom stalk).
1/2 Cup Beef Broth
2 Tablespoons Soy Sauce
2 Tablespoons Sherry
2 Tablespoons Light Brown Sugar
1/2 Teaspoon Cornstarch

In a large bowl add the minced garlic, beef strips, salt and freshly ground pepper.   Toss the ingredients together until well combined.  Set aside.

Heat the sesame oil over high heat in a large wok or deep skillet.  Add the carrots and ginger to the pan and stir fry for 3 minutes.   Add the garlic beef and stir fry until lightly browned (about 4 minutes). Add the asparagus to the pan and stir fry for another 4 minutes.

In a small bowl add the beef broth, soy sauce, sherry, brown sugar and cornstarch.  Whisk the ingredients together until well combined.  Pour the sauce mixture into the pan with the beef and vegetables and stir fry for another 3 minutes.

Transfer the asparagus beef onto plates and serve with steamed rice on the side.  Enjoy.
