Shiitake Mushrooms & Mustard Greens in Sweet Garlic Hoisin Sauce
Stir fried vegetables is a good way to make a quick side dish or a vegetarian meal. This Chinese style stir fry combines Shiitake mushrooms with mustard greens in a sweet garlic ginger hoisin sauce. A quick, easy and flavorful dish.
Serve it with steamed jasmine rice or on a bed of noodles. Also goes well as a side dish to stir fried meat dishes such as Mongolian Beef or Beef Bulgogi.
Prep Time: 5 minutes
Cooking Time: 20 minutes
1 Tablespoon Soy Sauce (low sodium)
3 Tablespoons Hoisin Sauce
1 Teaspoon Sugar
2 Tablespoon Sesame Seed Oil
6 oz. Shiitake Mushrooms (kept whole)
2 Large Garlic Cloves minced
2 Slivers Ginger
1/2 Bunch Chinese Mustard Greens cut into 2 inch lengths
Place the soy sauce, hoisin sauce, sugar and 1/2 cup water in a medium bowl. Whisk the ingredients together until well combined. Set aside.
In a large skillet or wok place the sesame seed oil over high heat. Toss in the Shiitake mushrooms and stir fry until soft (about 5-7 minutes). Add the garlic and ginger and stir fry until fragrant (about one minute). Pour in the soy sauce/hoisin mixture and let simmer to reduce the sauce (about 3 minutes). Add in the mustard greens and stir fry the ingredients until the greens are wilted (about 5 minutes).
Season with salt according to taste.
Transfer the vegetables with sauce onto a large plate or bowl and serve. Enjoy.
