Asparagus makes a nice vegetarian side dish or meal. This quick and simple stir-fry recipe cooks asparagus in garlic infused olive oil and butter. Mint is then added at the end to give it an added note of mint flavor.
To make this a full vegetarian meal try it with a side of pasta such as a lemon garlic fettucini with parmesan.

2 Tablespoons Olive Oil
3 Garlic Cloves Sliced
1lb. Asparagus cut into 2 inch pieces (thick bottom stock discarded)
2 Tablespoons butter
Salt and Freshly Ground Pepper
1/4 Cup Fresh Mint chopped
In a large skillet, heat the olive oil until it glistens. Add the sliced garlic and cook stirring frequently until golden brown (about 3-4 minutes). Add the cut asparagus along with the 2 tablespoons butter and stir fry for 2 minutes.
Remove the skillet from heat. Season the asparagus with salt & pepper. Add the fresh mint and stir until the mint leaves are wilted and the asparagus is well coated with the sauce.
Serve as a side dish to any main course.
