Spanish Garlic Mushrooms are a common Spanish Tapa. Mushrooms slow cooked in olive oil, butter, garlic and white wine make for a perfect side dish to grilled meats such as steak or chicken. It is also a great vegetarian dish on its own or it can be served as one of several Spanish Tapas such as croquettas, Spanish Tortilla or even Pollo al ajillio.

1 Tablespoon Olive Oil
1 Tablespoon Butter
12 Garlic Cloves sliced
1.5 lbs. White Button Mushrooms quartered
1 Cup Dry White Wine
Salt & Freshly Ground Pepper
2 Tablespoons Parsley chopped
In a large skillet place the olive oil over high heat. Toss in the garlic slices and stir fry until golden brown (about 3-4 minutes). Reduce the heat to medium. Add the mushrooms to the pan and let cook for 10 minutes without stirring. Pour in the wine and cook for an additional 10 minutes or until the liquid is completely evaporated. Add the chopped parsley and stir fry for an additional 2-3 minutes. Season with salt and freshly ground pepper according to your preference. Serve hot or at room temperature.
