Lemon Garlic Fettucini with Parmesan

A simple pasta dish can go a long way especially for weeknight fare. This tasty Italian recipe for fettuccine in garlic and lemon demonstrates how few ingredients can really make an impact on one's palate.  This recipe for two can be made in less than 20 minutes.  Add a quick salad on the side to make it a full meal.

Servings: 2
Prep Time: 5 minutes
Cooking Time: 15 minutes


12 oz. Fettuccine (fresh or dried)
6 Tablespoons Olive Oil
4 Garlic Cloves sliced
Juice from 1 large Lemon
Salt and Pepper
Parmesan Cheese

Cook the fettuccine according to its package instructions.  While the noodles boil, heat the olive oil in a small skillet at medium high heat.  Add the slices of garlic to the oil and cook until  golden brown (about 2 minutes).  Remove from heat and set aside to cool to room temperature.

Once the noodles are cooked to al dente, transfer them to a large bowl while still hot.  Add the lemon juice and the garlic olive oil to the bowl and stir the ingredients together until the noodles are well coated.  Season with salt and freshly ground pepper.

Serve with shavings of Parmesan cheese.   Makes a nice vegetarian light meal on its own or it can be served with a meat entree.
