The avocado butter is also great on grilled steaks, chicken or fish.

Avocado Butter (makes about 1.5 cups)
1/4 Cup Green Onions chopped
1/4 Cilantro chopped
1 Serrano Pepper chopped (optional)
3 Tablespoons Butter melted
3 Teaspoons Lime Juice
Salt and Pepper
2 Teaspoons Olive Oil
3 Garlic Cloves chopped
12 medium sized Shrimp (shell and heads removed - tails kept on)
2 Tablespoons Avocado Butter
Start with the Avocado Butter. Cut the avocado in half, remove the pit and scoop the avocado meat into a food processor. Add the green onions, cilantro and optional Serrano pepper (for some added heat) into the food processor. Process the ingredients on high speed to a thick sauce (about 2 minutes). Pour in the melted butter and lime juice and process again until well combined (about 1-2 minutes). Transfer to a bowl and add salt and pepper to taste. Seal the bowl with plastic wrap and refrigerate.
For the garlic shrimp, heat the oil in a medium skillet. Add the garlic to the hot oil and saute until fragrant (about 1 minute). Add the shrimp to the pan and saute on high heat for three minutes (until the shrimp begins to turn pink in color). Add the avocado butter and saute the shrimps until fully cooked (about 3-5 more minutes).
Serve the shrimps on a plate with remaining avocado butter as a dip. Enjoy.
