Perfect French Fries Every Time

Cooking french fries usually requires a two step process.  First poach the potatoes to cook it all the way through creating a soft center and then giving it a quick deep fry at high temperatures to create a crisp outer layer.  If the first step is ignored and the results are less than satisfying.

Here's a simple recipe to cooking perfect homemade French Fries every time.  You will need patience though since it will take about 50 minutes to an hour to cook these fries right. Believe me.  It is worth the time.

Prep Time:  5 minutes
Cooking Time:  55 minutes.


2 Large Russet Potatoes (Peeled)
Vegetable Oil 
Sea Salt (optional)
Chopped Parsley to garnish (optional)

Step 1: Cut the peeled potatoes in to fry strips of your choice (short or long, skinny or fat).  The beauty of this recipe is it works with just about any choice size of potato strips. 

Step 2: Place the potatoes in a 3 quart pot with strips laying flat at the bottom of the pot and stacked.  Pour the room temperature vegetable oil over the potatoes until all of the strips are submerged under the oil (about 2.5 to 3 cups).  The top layer of potatoes should be about a half-inch underneath the surface of the oil.

Step 3: Place the pot with potatoes on a stove top and turn on the heat to a medium low temperature. This will start the poaching process.  After about 10-15 minutes the oil will begin to simmer.  At that time use a spatula to carefully stir the fries and make sure the bottom layer of potatoes do not stick to the bottom of the pot.  Continue to let the potatoes simmer at medium low heat for another 25 minutes.  Then increase the heat to a high temperature and let the fries cook for another 10 minutes or until the potatoes begin to brown. 

Step 4:  Remove the French Fries from the oil and transfer to a wire rack or a plate with a layer of kitchen/paper towels to cool (for best crisp results I highly recommend using a wire rack).  Sprinkle sea salt over the fries according to your taste.  Sprinkle chopped parsley to garnish and serve.  Enjoy your perfect batch of French Fries.  Usually a favorite with Hamburgers, Sandwiches or Fish & Chips.
