Salads can be some the easiest, quickest and healthiest meals to put together. Spinach salad is definitely among my favorite leafy salads, and this one is packed with ingredients. The addition of crisp bacon to this recipe provides the dish some crunch and a lot of protein. The feta cheese adds a mild salty flavor to each bite which works well with the sweet and spicy red vinaigrette dressing. Perfect for a lite meal or a side dish.
Prep Time: 15 minutes
Cooking Time: 1 minute (dressing)
16 oz bag of Baby Spinach
1/4 cup Bacon freshly cooked and broken into bits
1 Egg Hard Boiled chopped
1/2 Medium Red Onion thinly sliced
2 cups Mushrooms sliced
1 cup Cherry or Grape Tomatoes sliced
1/2 cup Feta Cheese chopped
2 tablespoons Olive Oil
1 teaspoon Spicy Mustard
1/4 cup red wine vinegar
2 teaspoons Agave Nectar
Step 1: The Salad -- Combine the spinach, bacon, hard boiled egg, red onion, mushrooms, tomatoes and feta cheese in a large bowl. Set aside.
Step 2: The Dressing -- In small skillet bring the olive oil to medium high heat. Add the vinegar, mustard and Agave Nectar to the skillet and stir the ingredients until well combined. Bring the mixture to a simmer (about 10-15 seconds) then removed from heat and pour into a bowl to cool.
Step 3: Add the Dressing to the salad. Toss and serve.
Tip: Also try substituting the feta cheese with blue cheese for more robust flavors.
