Fish Fry with Mango Salsa



This is a fish dish that I cook fairly often.  It is very easy to make and is a great quick option after a busy day.  To make things even easier, I simply use store brand fish fry mix, such as Sylvia's Soul Food Fish Fry. The mango salsa is really what gives this dish its flavor.  The salsa greatly compliment the fish fry and can be made in less than five minutes.

Prep Time: 10 minutes
Cooking Time: 10 minutes

Ingredients:

2 ripe mangoes peeled and chopped into cubes
12-15 cherry tomatoes chopped
1/4 cup Cilantro or Italian Parsley chopped
1 Cup Vegetable Oil
1 Cup Sylvia's Soul Food Fish Fry (or Fish Fry Brand of your choice)
2 Fillets of Tilapia or Catfish.  Note: Tilapia is a mild flavored fish which I prefer over Catfish.

Step 1- Mango Salsa:  In a large bowl combine the chopped mangoes, chopped tomatoes and cilantro.  Stir ingredients together until well combined.  Set aside.

Step 2 - Cooking the Fish:  Heat the vegetable oil to medium high  in a large skillet.  Dip the Fish Fillets into the Fish Fry Mix until all sides are well coated.  Add the coated Fish Fillets to the hot oil and cook until golden brown (about 3 minutes on each side).  Place the cooked fish over paper towels to cool for 5 minutes.

Serve the Fish with the mango salsa over the fish or on the side.

Tip:  For a sweeter mango salsa add a tablespoon of honey or Agave to Step 1 before mixing.
